Summer Citrus Coleslaw

Easy Summer Citrus Coleslaw

Simple and Easy.

INGREDIENTS

  • 14 oz coleslaw mix

  • 1/4 cup chopped cilantro

  • 2 tbsp thinly sliced green onions (about 1 1/2 stalks)

  • 2 medium oranges, cut into small pieces

  • 6 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 2 tbsp pure maple syrup

  • 1/2 tsp kosher salt

  • 1/8 tsp ground black pepper

  • 1/3 cup sunflower kernels, roasted & salted


DIRECTIONS

  1. In a large mixing (w/ a lid), combine coleslaw mix, cilantro, green onions, and orange slices.

  2. In a container w/ an airtight lid (like a mason jar w/ lid), combine the rice vinegar, oil, maple syrup, salt, & pepper. Secure the lid and shake jar vigorously to thoroughly mix the ingredients.

  3. Pour the oil & vinegar dressing mixture over the coleslaw mixture. Toss well until the coleslaw mixture is well coated. Cover the bowl and refrigerate for about 6 hours. This will allow the flavors to marinate and fully combine.

  4. Right before serving, toss the mixture well and garnish with sunflower kernels.

  5. Any leftovers will keep for a couple of days.

  6. This recipe will provide 8 - 3/4 cup servings. Each serving provides about 106 Calories; 4 grams healthy Fats; 12 grams Net Carbs; and 2 grams Protein.
