Spicy Ground Beef w/ Veggies

Ingredients: Serves 4

  • 1 lb Lean ground beef, 88/12

  • 2 tsp Spanish rice seasoning or chili powder

  • Salt & Pepper to taste

  • 3 Green onion stalks, thinly sliced

  • 2 Tomatoes, medium, large diced

  • 4 Sweet mini peppers, sliced

  • 1 Tbsp Cilantro, fresh and chopped

Instructions

  1. In a large skillet, add ground beef, Spanish rice seasoning, salt and pepper. Crumble the ground beef.

  2. About halfway through cooking, add the sliced green onions and the sliced sweet peppers. Cook until these soften up.

  3. When the ground beef is pretty much cooked through, add the diced tomatoes and the chopped cilantro.

  4. Cook until heated through. Adjust seasonings as needed. May need to add just a touch of water so that the mixture is “juicy and moist”.

  5. Serve by itself or over your some cauliflower rice or brown rice.

  6. Each serving contains 23 grams Protein, 4 grams Net Carbs, and provides 239 kilocalories of energy.
