Tomato Basil Shrimp

Ingredients: Serves 2

  • 3 Tbsp butter or olive oil (for more flavor, I like real butter…go ahead, you have my permission)

  • 1 clove garlic, chopped

  • 1/4 cup diced onions (can use white, yellow, or green onions)

  • 4 sweet mini peppers, sliced

  • 0.60 lbs of raw shrimp (use 21-25 count shrimp—this is about 14 shrimp)

  • 2 medium tomatoes, chopped (home grown if possible)

  • 4 Tbsp fresh basil, chopped

  • 1 cup zucchini noodles

  • Salt and pepper to taste

Instructions

  1. In a non-stick large skillet and on medium heat, melt butter. Add garlic, onions, and mini peppers. Saute until onions and peppers are just starting to softened up.

  2. Add shrimp to the skillet. Toss and stir as shrimp begin to cook. This will only take a 4-5 minutes so be careful not to overcook the shrimp.

  3. Just as the shrimp begin to appear cooked, add the tomatoes, basil, and zucchini noodles. Add salt and pepper to your own desired taste.

  4. Cook until the mixture is thoroughly heated through.

  5. Serve immediately and garnish with some freshly grated parmesan cheese.
